Following the Gulf War in 1991, the research team led by Elias and Chan Sabo visited the Persian Gulf from the American Intercontinental University (AIU) to establish relations with the various ministries and commissions of higher education and schools throughout the region.
 
The lack of high-quality private education at the university level, coupled with the appreciation of the American higher education model, prompted them to conduct a feasibility study on the prospects of establishing an American university in the Persian Gulf. The results confirmed the high interest and desire for campuses that offer American-approved educational programs.
 
It soon became clear that the emirate of Dubai in the United Arab Emirates would be the ideal place to set up such an institution. People have discovered that Dubai is a politically stable, international, and outgoing principality. The private sector, which is almost non-existent in higher education, has just begun to attract people's attention.
 
Elias Bou Saab moved to Dubai in 1995 to formally establish an American University in Dubai. The initial enrollment of AUD is 165 students, of which more than half are women. By the time the former Secretary of State and Treasury Secretary James Baker delivered a keynote speech when AUD was first established in 1998, the number of registrations had climbed to 499. In order to express confidence, the Dubai government decided to build a 1,400,000 square foot campus for the university. 2000 was also a significant year, because that year the university was officially licensed by the UAE Ministry of Higher Education and Scientific Research (MOHE). Since its establishment in December 2007, the American University in Dubai has been independently accredited by the Southern Association of Colleges Council (SACSCOC) for the third time since December 2007, which is one of the seven regional accreditation committees in the United States.
 
The American University in Dubai also maintains an exchange program with the Georgia Institute of Technology in Atlanta, Georgia. Students from both institutions can take courses and earn credits through exchange programs.
